Quinoa and Black Beans

Lately this is one of our favorite dinners! You can find the original recipe here but I altered it a bit since we have so many food allergies. Here is how I make it:

Ingredients
1 teaspoon olive oil
3 cloves of garlic, minced
3/4 cups uncooked quinoa
1 1/2 cups chicken broth (I make my own when I boil chicken and then freeze it for when I need it since we are allergic to some of the spices and vegetables in store bought broths)
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper
Salt and pepper to taste
1 can corn (15 oz.)
2 cans black beans (15 oz. each), rinsed and drained
1/2 cup chopped fresh cilantro

Heat olive oil in medium sauce pan over medium heat, stir in garlic and saute until lightly browned.
Mix Quinoa into sauce pan and cover with chicken broth. Add cumin, cayenne pepper, salt, and pepper. Bring to boil, cover, reduce heat, and simmer for 20 minutes.
Stir in corn and beans, then mix in fresh cilantro.

Super easy and so yummy!
My husband likes to put sour cream and shredded cheese on top but it's just as yummy with out it!

Independence Day

I forgot to take pictures but Britton and I made this cake for the 4th of July. We had fun spending the day with friends, then off to the park to watch fireworks off the butte and then back to our friend's backyard to watch National Treasure outside with a projector on the back side of the house.
I love the 4th of July!

Pear Pancakes

It's so grand having a pear tree around. The pears aren't ripe yet but when a few fall off the tree I try to rescue them before the deer eat them and let them sit on my counter until they're ripe. Then they can go into delicious recipes like this one. :)
